Sure it’s easy to buy pre-packaged pasta off the grocery store shelf. But when it comes to pasta made from scratch, nothing tastes fresher. Still, it’s a process – some may it call a labor of love.
Former Bravo "Top Chef" Nikki Cascone, of Huntington, was at The Meat House in Roslyn Saturday, March 2, teaching home-chefs what goes into making pasta. When all was said and done, Cascone, who appeared on Bravo in Season 4, topped the pasta with a sauce made of sausage, tomatoes and other ingredients she picked up at The Meat House.
Here are the ingredients for Cascone’s homemade pasta: 3-1/4 cups flour, 4 eggs, and a pinch salt. Next comes the magic, which includes mixing, kneading and rolling the dough before putting it through a pasta-cutting machine, all the while making sure the dough does not feel wet.
Cascone's class was part of The Meat House's one-year anniversary celebration in Roslyn. The festivities also included a February visit by former NY Mets, Mookie Wilson, who cooked up his signature chicken dish.
